Slow-Cooker Garlic and Herb Roasted Chicken

Servings: 16 to 20 Cheats/Serving: 2 This recipe works best with a chicken that has a pop-up timer. Ingredients 5- to 5- pound roasting chicken 1/2 cup coconut oil 2 teaspoons paprika 4 garlic cloves, minced Salt and pepper to taste Instructions Prep the chicken my cleaning out the cavity so no innards are left. Rub hardened coconut oil all over the chicken, and then rub paprika, garlic, salt, and pepper all over the chicken, both inside and out. Place the chicken in a slow cooker. Cook on high for  1 hour, then reduce the heat to low and cook an additional 5 hours until the meat is tender.

Slow-Cooker Fire-Roasted Tomato Beef Chili

Servings: 8 Cheats/Serving: 2 Ingredients 2 pounds beef stew meat, cut into 1-inch chunks 1 large yellow onion, diced 8 ounces fresh mushrooms, sliced 2 medium carrots, chopped 2 tablespoons chili powder 1 teaspoon cumin 1 teaspoon garlic salt One 28-ounce can fire-roasted tomatoes 1/2 teaspoon oregano 1 tablespoon olive or coconut oil 28 ounces water 2 teaspoons sea salt (optional) Instructions Add all the ingredients to a slow cooker. Cook on medium heat for 4 to 6 hours, until the beef is thoroughly cooked.
