For those of you who like Indian food, or just good flavorful food in general, this is a great recipe that I came up with yesterday. It is very quick, and you don’t have to chop or sautee anything. Start to finish it takes 20 minutes. The coconut curry is the real shortcut here, and in Boulder this is for sale at Whole Foods, Safeway and Lucky’s. Highly recommend you try this. You can also swap the chicken for shrimp or fish or even lobster. This recipe is a micronutrient powerhouse, with huge doses of Vitamin C, B vitamins, tons of minerals. I guarantee that if you make this, you’ll make this again.
What You Need:
-2 Pounds Of Cubed, Boneless Chicken Thigh
-1 Container of Maya Kaimal Coconut Curry
-1 Container Hot Salsa (14 oz or so)
-1 Can regular Coconut Milk (NOT the So Delicious stuff, you need it in the can)
How To Make
Take a large pot, turn the heat on medium. Put the salsa, coconut milk, coconut curry and chicken in the pot. Stir and cook for 20 minutes. It will be done when you see some of the extra fat from the chicken rise to the top.
